A Super Simple but Yummy Dinner

I have this super simple but yet super delish recipe that every time I make it gets devoured. I also have shared with some friends and they love it too! I am kinda embarrassed to call it a recipe since it’s seriously so easy but I’ll share it anyway!!


One Pan Sausage and Veggie bake

  • 1 onion chopped
  • 1 zucchini sliced
  • 2 sweet potatoes peeled and chopped
  • 1 russet potato peeled and chopped
  • 3 large carrots peeled and chopped
  • bushel of Brussel sprouts sliced or chopped
  • 2 packages of your favorite chicken sausage sliced (we really like a spicy one like mango chipotle and a sweet one like apple and chicken)
  • 2 tbs. extra virgin olive oil
  • 3 tbs. Italian seasoning
  • 1 tbs. salt
  • 1/2 tbs. pepper
  1. Preheat oven to 400 degrees
  2. Chop all veggies, place on baking sheet
  3. Coat veggies in olive oil and toss with seasoning
  4. Top veggies with sliced sausages and place in oven
  5. Bake for 45mins to 1 hr depending on how crispy you like your veggies and sausage
  6. Enjoy!

*Note* We like to put this recipe over the top of some cous cous or quinoa and serve with a side salad, glass of wine is optional but recommended 😉

Breakfast consisted of Crave Check, coffee (must have!), egg bake with a side of toast and Olly Vitamins

Before my morning workout I took Catalyst, dropped my cutie pie munchkin off at school and enjoyed a 60 minute Muscle Max class!


After my workout I drank a recovery drink that I SWEAR by, I don’t get very sore anymore, seriously! Try it! You’ll be glad you did

Lunch was so yummy, leftover chipotle for the win! Plus an iced coffee for an afternoon pick me up.

While Charlotte napped I worked on the blog, did some laundry and caught up on a little bit of The Bachelor. I haven’t watched this show in years but for some reason I decided to give it another shot and I’m hooked again. Who likes who so far? I like JoJo and Lauren B.

After Charlotte woke up we took Maverick for a walk and I did some paint touch-ups in the house. We just built a new house and when we moved in we dinged a couple corners, found a few spots that needed help. The builder left us with a paint kit so I went around doing the walls and baseboards. Anyone else love the smell of fresh paint?

Time for dinner! Brent is traveling for work so I made just a quick fried rice and egg rolls for Charlotte and I.


I had an appointment later this evening so my mom and brother came over to watch Charlotte for me. I got home around 8 and it was time to get Charlotte to bed (she’s normally in bed by 7). I finished up The Bachelor episode I started earlier with a small glass of wine and a handful of Cashews.

10 o-clock rolled around and it was time for bed!

I’ve been looking forward to Saturday for awhile, my husband’s two sisters invited me to an event at Upstairs Circus. You pay an entry fee which includes unlimited mimosa’s (yes, please) and the supplies to the craft of your choice. I was actually really surprised by the craft options you could choose from.

Valentine’s Treats + a workout!

I’ve gathered the most delicious looking treats in one place for you to make for Valentine’s Day. Which is also why I included a workout because how do you pick just one of these decadent desserts, I won’t judge if you make a few, or all 😉

Peanut Butter Lava Cake-Okay, what’s not to lust love? Peanut Butter+Chocolate+Lava cake? OMG

Chocolate Calzone’s-This is a fun activity plus a delicious treat.

Strawberry Creampuffs-There’s something about creampuff’s that I can’t resist. Maybe the light airy texture? Maybe the cream on the inside? (That’s what she said! *Michael Scott anyone?*)

Chocolate Sugar Cookies-Chocolate cookies, frosting, sprinkles, and in the shape of a heart?! Couldn’t be cuter!

Red Velvet Brownies-Okay my husband is going to love me forever for these. He loves brownies and he loves red velvet cake, so put them together and who knows what will happen?!?!

Now for a workout to make us feel a tad less guilty for the abundance of indulgences!


My Favorite Items from Trader Joe’s

For the longest time we didn’t have a Trader Joe’s close to me but when we lived in Dallas for 3 years I fell in love with the place. Once we moved back to Colorado I was so bummed to have to say goodbye to my beloved Trader Joe’s. But the company must know my love for it because while we were in Texas there was a location here in Colorado built that’s close to my house! I thought I would share a small list of some of the items I love from Trader Joe’s.


These pomegranate seeds are so convenient! I know I can easily buy a whole pomegranate and deseed it myself, however, if I’m strapped on time these babies are a life saver. My daughter loves these things and they are super nutritious.


I am in LOVE with this item. This item is seriously perfect and you need to go get some ASAP. Now before you knock on it being cauliflower it honestly doesn’t really taste like anything. The cauliflower easily tastes like whatever you season it with. We use this for a replacement in any dish you would typically use rice.


This juice is seriously refreshing. On days that I have long runs or are feeling super thirsty this juice quenches my thirst! Plus, add this to a smoothie in place of water for a little sweetness!


Sriracha and Ranch, need I say more? Nope!


My husband cannot have chili or a soup dish without cornbread. I have tried so many cornbread recipes, and none of them come close to this boxed mix. I would say this bread is on the sweeter side and is super tasty.


I love coffee, I mean REALLY love coffee. This coffee is one of those you can drink each morning and never get sick of the taste and how smooth it is. If you’re a coffee drinker like myself you will love this one.


Any type of complete salad mix, I am in love with. I never really get sick of salads but I love having a variety of toppings and flavors to give my taste buds diversity. Plus, it’s nice not having to buy all those different toppings that you only use a handful of times.


In this house we love BBQ sauce, and this one we can’t get enough of. Our daughter is in the “dip anything and everything into a sauce” phase and this is one of her favorites too.

Healthy Super Bowl Snacks

The Super Bowl is finally here!! I wouldn’t say I’m a huge football fan but I am a Bronco’s fan through and through. I’m totally stoked to watch Peyton win a final Super Bowl so he can retire-yeah I’m sure this is his last year playing *I’m an expert* 😉 However, I’m not a huge fan of the calorie bombs that can be found at most Super Bowl parties. Here are a few snack ideas to help keep your healthy eating on track…

  • Salsa Chicken Tacos

This is by far one of my favorite dishes, it’s easy and super tasty.

(Forgive the quality of the picture!)



  1. 1 package chicken breasts
  2. 1 jar of your favorite salsa
  3. 1 package of taco seasoning (or however you like to season your taco meat)
  4. Dump all the above into a crockpot and cook on high for 4-5 hours until meat can be easily shredded
  5. Top with your favorite things (guac, sour cream, cheese, etc)
We also enjoy using lettuce as the taco wrap instead of tortillas but use whatever floats your boat!
  • Spinach-Artichoke Dip-Who doesn’t love a warm creamy dip? If you don’t, I’m not sure we can be friends

Use pretzel crisps as a lower calorie dipper than tortilla chips

  • Flatbread pizza-You really can’t go wrong with pizza, period!

Thin Crust Tomato, Artichoke and Spinach Flatbread Pizza

  • Fruit Salad-Cut up your favorite fruit that is in season, squeeze half a lemon on it for a little zing and you have a healthy sweet treat.
  • Veggies and your favorite hummus-Cut up slices of bell pepper, use snap peas, carrot slices, etc and dip into your favorite hummus!


Last but not least my unhealthy but super delicious  cocktail that I’m loving right now is this heaven in a glass…
