Three Years Old

And just like that, our baby girl is THREE today. I have honestly been a wreck the past couple of days, going through old photos and looking back on the wonderful life we’ve created. Having your child grow older is such a bittersweet experience. I love watching Charlotte grow, learn, explore, become her own little person, but it also pains me to look at her hands that are no longer the baby hands, or listen to how she speaks words the proper way. I’m so ridiculously thankful God chose me to be Charlotte’s mom, it has by far been the best thing to happen to me since I met my husband. Being a mom is everything I had ever dreamed it being and more (if that’s even possible). Today we celebrate my not so baby girl and her third birthday, Charlotte we love you so much and treasure every minute we get to spend with you.

Sweet Summer Time

Happy August 1st! Summers in Colorado are one of my most favorite things ever, and I can say that after spending 4 ridiculously hot and humid summers in Texas. We have been so busy though this summer, hence the radio silence around here lately. In reality, I’ve been trying to spend more time in the moment and less on my computer/phone. But here’s what we’ve been up to lately…

This past weekend Brent and I left Charlotte with her Neena and we drove 2 hours north to Cheyenne, WY. Every summer the Cheyenne Frontier Days is held there, which is a week long event with rodeo’s, concerts, carnival, food, etc. This year Brent and I went with another couple friends of ours and we went to see Florida Georgia Line.

FGLGuys, they were SO good, I mean one of the top concerts I’ve been to. They are so extremely talented and really humble. Our favorite part of the night was a lineup they did of top cover songs throughout our middle school and high school years (they are around the same age as us). It was just overall an awesome concert, and I would totally go see them again sometime.

Somehow, we are now in preparing for the school year mode. Charlotte starts preschool in a few weeks so we are trying to soak up the last bit of summer that’s left and make sure we have what we need for the school year to start.

Hello friends! It’s been awhile, hasn’t it?! Well, it’s finally sunny and gorgeous and here and I’ve had a hard time staying inside long enough to write anything. Since it has been a bit since I’ve posted I thought I’d do a little update…..


Jr. Preschool is officially over and we are on summer break. Her school pictures just kill me, she looks so grown up. I still cannot believe that she will officially be in preschool this fall. We are really going to enjoy the extra time together over the summer.


I got a Nespresso machine for Mother’s Day and I’m super in love. Brent and I had originally planned on getting another Keurig coffee maker but we were sold on this fancy device by a very convincing sales woman in Macy’s. I’m super impressed with it…


So my baby had her first hospital trip and it totally sucked. Charlotte got an ear infection and Croup which made her super sick. We had a very scary incident with a coughing fit and her not breathing. She needed to get a breathing treatment to help her breathe but fortunately that really helped her feel better. I really hope that this is the only hospital trip we have to go on with her.


I’m ridiculously thankful for finding MOPS and for this group of women right here. We had our last meeting until September and I’m really going to miss it.


We built a new house and closed back in December and we FINALLY got some grass in the front yard!!! As you can tell, we are super excited about it!

Charlotte’s cousins came over Friday night and we decided to have an impromptu slumber party. Brent and I were worried had a temporary lapse in judgement but we were pleasantly surprised when the girls were in bed by 10pm and even slept in until 8. The girls even helped me make breakfast in the morning, we didn’t even mind the extra crunch in our pancakes from the egg shells 😉

Charlotte and I stayed busy when Brent was out of town for a week traveling for work. The weather was gross but we had to walk the pup anyway since we have no grass in our backyard yet. We made trips to the park and bookstore and even had lunch with Neena (my mom).


My best girlfriend homeschools her three kiddos and decided to add two baby ducks to their family! Charlotte was so excited to meet these cuties and even had a few toys picked out for them, so sweet! I don’t think there can be anything cuter than this picture.


Sorry for the grainy picture but I had to include this one. I let Charlotte stay up late so she could see daddy when he got home from his work trip. She was so happy to see him, it truly melted my heart. Charlotte told me “Mama, take our picture!!”


Brent’s dad is a really great DIYer and he came over this weekend to help us install our sprinkler system. It feels pretty good to say we did our own sprinkler system in our very own house! Charlotte had a great time helping grandpa. After putting Charlotte down for nap I crashed too, hard, for about an hour and a half. Yard work is sure exhausting, next weekend we are getting soil and laying sod!

I’m Still Here….

Hey guys! It’s been awhile huh? Life has been crazy to say the least which has kept me away from my beloved blog. But let’s be real sleep>blog, sorry not sorry. Also, how in the heck is it Monday again and almost May, ahhhh!


So, let’s do a little update, shall we?

Most of the reason I took an unplanned break from the blog was due to some serious sleep issues we’ve been having with Charlotte. It started about two months ago but has progressively gotten worse over the past few weeks. We are having major struggles with nap and bedtime, pour me an extra cup of coffee will you? You may remember that we moved Charlotte into a big girl bed back in January and didn’t start to have issues with it until a few weeks ago. Charlotte has now realized that she can get out of her bed and venture out around the house at her leisure. Needless to say, each and every nap time became a major struggle and if I could get her to stay in her bed and fall asleep it didn’t end up happening until maybe 3 o’clock meaning she would sleep until 4:30/5 making her not tired for bedtime at 7:30. So we’ve been experimenting aka going crazy…..okay fine I’m being a bit dramatic. We’ve been playing with moving back her bedtime to 8/8:30, well that didn’t help either. So right now where we are at is Charlotte has “quiet” time in her room for at least 45 minutes to an hour. This means she has to stay in her bed/room and either read or lay down for some rest. Honestly, this seems to be working other than the few times she’s passed out cold from being tired…..sigh……

Toddler Meal Ideas

Good morning! Happy St. Patty’s Day!! Don’t forget to wear green!

Is anyone else still trying to adjust to Daylight Savings time? I know we sure are in our house. I’m also really glad that it’s Thursday and the weekend is right around the corner. We have a really fun weekend planned with lots of Easter activities.

The first time I did a post like this I got a lot of positive feedback so I thought I would do another! I really try to do a good job at making sure her plate is complete with fruit, veggies, protein, and dairy. Sometimes she does an awesome job eating and sometimes she takes two bites and is done. I also mentioned last time that Charlotte loved those Applegate sausages, yep, I jinxed myself because she hasn’t touched them since, ha!


Chicken stir-fry, cashews and cauliflower rice.


Homemade banana bread, strawberries/blueberries, sausage and a scrambled egg.


Pork chops with sautéed apples and onions, baked sweet potato, and pomegranate seeds.


Enchilada, guacamole, sliced bell peppers, and strawberries.

So there’s a glimpse of what my 2 1/2 year old has been eating lately. Some days we battle over meal time and some days they go really smooth. I wish I had some really awesome trick on how to get your toddler to eat all their meals but sadly I do not at this time.

This Season Of Motherhood

I’m finding myself extremely fond of this particular season of motherhood. There are many times a day that I try and soak into my memory moments that are so fleeting. My husband and I celebrated this weekend with a couple who are expecting their first child next month. This celebration of new life had me reflecting upon the past 2 1/2 years and how quickly they’ve gone by. The first few months are such a blur of no sleep, feeding the baby, changing their diaper, and keeping your sanity. I remember feeling so guilty for grieving the loss of my old life, my independence, my life with just my husband. We soon settled into a groove that was beautiful, I had dreamed of being a stay at home mom since I was little and I was finally living my dream. Each phase seemed to come and go so quickly, our schedule of life changed as soon as we got used to the previous one. I craved something more consistent, I was am such a planner and scheduled person that the shifting phases of newborn life was a challenge for me.




I remember researching each phase, and how long it would last, getting ready to prepare for the next one. However, if I’m ever blessed with another child I will choose to live in the present season, and soak up every little moment in that season (even the hard ones).


I am loving the current phase of motherhood I am in right now. I love the wonderful interactions and conversations I have with Charlotte. I would talk to Charlotte constantly when she was a baby but it’s so different having her be able to understand what I say and react to it. She is seriously a sponge, she soaks up everything, watching, listening. I love her sense of humor, she’s truly hilarious. Though we have a solid schedule (she goes to bed at 7:30 and is up at 7am, naps from 1-3) we do have flexibility if our days require it. She rarely has trouble sleeping at night (thank you Jesus) and loves her naps (another thank you Jesus). She has started to remember when I tell her something exciting that is coming up (like a birthday party, and ice cream treat, etc) this is both good and bad.

“Mama, I love you forever” is what my daughter told me one day while I was holding her close to me. I know she doesn’t understand the concept of forever but she does understand love. When I dreamed of our lives together when I was pregnant I dreamed of a life full of joy and love. I wanted my daughter to understand the love that I feel for her, that there is nothing I wouldn’t do for her. In the moment she spoke those words to me I felt like she knew, she could feel what I felt for her. This season of motherhood I am choosing to be present and soak up all that I can knowing that it will pass all too quickly and I won’t be able to get it back.

What My Two Year Old Eats

I’m going to start the post with a preface; my daughter has always been a great adventurous eater with a good appetite, until she turned two! I love the topic of nutrition and try to be responsible in my food choices for our growing daughter. I homemade all of her baby food with organic fruits and veggies, I started adding probiotics to her milk when she started drinking it, she didn’t have any sugar her first year of life, etc. Things quickly (and annoyingly) changed after she turned two. We now have DAILY I mean d.a.i.l.y. struggles over meals, something I’m still kind of trying to figure out! So here are some meals that we she has been eating lately.


Applegate chicken sausage, organic cheddar cheese, apple with peanut butter, organic mixed veggies


Whole grain toast with peanut butter topped with sliced banana’s and a sprinkle of chia seeds, fried egg, apple gate chicken sausage, vitamins, whole milk

Blueberry Chobani yogurt, protein pancake, apple gate sausage, defrosted organic cherries and blueberries, vitamins and milk.


Egg bake, whole wheat toast with grass fed butter and organic strawberry jelly, vitamins and whole milk.



This was Valentine’s breakfast, heart shaped pancake with pink sprinkles, heart shaped apples and sausage.


Chicken burger, salad, and sliced strawberries.

Jasmine rice, sliced steak, stir-fry veggies, and stir-fry sauce for dipping.

As you can tell we really love the apple gate chicken sausage around here, it’s easy/nutritious and has protein. You’ll also notice a lot of these pictures are from breakfast, it’s the least crazy meal around my house. Lunch is almost always leftovers from dinner the night before or some sort of snack plate and dinner is just usually too crazy for me to remember to take a picture.
